No Bake Peanut Butter Oat Bars
Ingredients:
- 3 cups (660g) smooth peanut butter
- 1 cup (320g) honey
- 1/2 tsp salt
- 1 tsp vanilla extract
- 4 cups (480g) quick oats
- 2 cups (320g) semi-sweet chocolate chips
- 2 1/2 tbsp (35g) unsalted butter
Instructions:
1. First things first, grab yourself a 9x13 pan and give it a good spray or line it with parchment paper. Leave a little overhang so you can easily lift those bars out later. Trust me, it makes life easier!
2. In a large saucepan, toss in that smooth peanut butter, honey, and salt. Set it over medium-low heat and gently warm it up until it’s all melted together. Keep stirring occasionally and let it go for another 2 minutes after it’s melted.
3. Once it's all nice and smooth, take it off the heat and stir in that lovely vanilla extract. Now, add in the quick oats and mix it all together until everything’s combined.
4. Pour that delicious mixture into your lined pan and gently spread it out. Don’t go smashing it down too hard or you’ll end up with some tough bars. Just enough to make it flat!
5. Now, grab a microwave-safe bowl and toss in those chocolate chips and butter. Pop it in the microwave and heat it in 30-second increments until it’s all melted and gooey. You can also use a double boiler if you prefer that method.
6. Once melted, pour that luscious chocolate over the oat mixture and use a spatula to spread it out evenly, covering every inch of those oats.
7. Pop the pan in the fridge and let it set for at least 2 hours. Once it’s firmed up, lift it out using that overhang and cut it into your desired sizes.
