Thanks to our garden and our friend that gave us a ton of tomatoes (he manages the local Auto Value), we just got finished canning 24 quarts of tomato sauce. That translates to 6 GALLONS of sauce. :dance:

We also have a 2 gallon pot of salsa simmering on the stove almost ready to can. That gives us 8 gallons total for the day. This is a good batch of salsa thanks to the addition of an entire jar of pickled jalapeno's from last year and 4 whole Habenaro peppers. yeah baby...

Our salsa recipe is a large pot of chopped tomatoes, 2-3 onions and at least 8 cloves of garlic, a half cup of sugar, 1-2 green peppers, assorted hot peppers of your choice, lime juice, some salt and black pepper, a couple tablespoons of cumin and I throw in fresh oregano from my herb garden.

There is nothing like cracking open a can of this stuff in the middle of winter.

Our tomato sauce is simply chopped fresh tomatoes that we puree right in the pot using a hand held
mixer (piggy calls it a boat motor).

That salsa sounds awesome, particularly with the habaneros. I'd love to try it!

Those Auto Value managers... I tell ya, those are some stand-up guys. ;) :D
 
want more? I froze three gallons of blanched then peeled tomatoes, thinking about canning some.

Talk to me about the pickled peppers please. Do you have a recipe to share?
