Ready for some Gumbo!!!

Turkey Bone Gumbo!!! Can't wait! Spent a couple hours this evening making turkey broth from yesterday's carcass. Real easy.. and the best way to get rid of the whole bird without endless turkey sandwiches.

Put the leftover carcass in a pot big enough to hold it, cover it with water, throw in about 4 celery ribs, two onions chopped in quarters, about a teaspoon of peppercorns, teaspoon of salt, two or three bay leaves and a couple of carrots..bring the whole thing to a boil and then simmer for two hours, strain it, pick off whatever good meat you can find, save as much of the onions, celery and carrots..then get ready for Turkey Bone Gumbo! I like to let it get cold in the fridge and pull out any fat that congeals up on top.

It's also a really good base for soup.

That's how we made the base for turkey soup after our thanksgiving.
We have a big stock pot with a strainer insert. So, after boiling it all down, we just lifted out the strainer to get at the carcass and sort everything out.
Then all the good stuff went back into the pool. Nice and easy.

Now the gumbo...

I got this from somewhere, but I don't remember..I think Emeril Lagasse.. I've been making it for years:

Make a roux out of a cup of vegetable oil and all purpose flour...dark brown...

When the roux is done, throw in a couple/three chopped onions, one green pepper, chopped, and about three chopped celery ribs, season with salt and cayenne pepper (I always go heavy on the heat and light on the salt...you can always add more..I use about a teaspoon measured out like Justin Wilson used to...and if you don't know who that is...I GARONTEE you need to get to Googlin'...

When the veggies are soft, add about 3 or 4 links of andouille sausage, sliced up or almost an entire one of those wannabe cajun kielbasa shaped things (it's fine if that's all you can get...but real andouille is best!) and fry em up for about 3 to 5 min so they brown and render a little...

Then just add two quarts of the broth from above and bring it up to boiling then bring it down to a simmer and watch it for 45 min...the add the left over turkey meat and whatver veggies you saved from making the broth (you didn't throw those gems away did you? ) and simmer 15 more minutes and you're done!

All you need is a bowl of white rice and a beer and go watch the Power Block on Spike!
